πCauliflower Cakesπ
β£οΈ 1 Cauliflower, cut up and roasted
β£οΈ10 oz Potatoes, shredded
β£οΈ1 Egg
β£οΈ2 Tbsp Green Onions, chopped
β£οΈ1/4 Red Onion, diced
β£οΈSalt, pinch
β£οΈBlack pepper to taste
β£οΈ1 Tbsp Olive Oil
π’Preheat oven to 400 degrees. Chop cauliflower, place on parchment paper. Sprinkle with salt and pepper. Add chopped onions. Roast for 20 min.
π’In a food processor, pulse cauliflower and onion mix until slightly chunky.
π’Let the mix cool. Add the egg and the rest of the ingredients (excluding oil).
π’Preheat skillet and add oil.
π’Use 2 spoons and plop 1/8c cauliflower mixture like pancakes onto skillet.
π’Cook until browned and temp inside reaches 160 degrees.
πEnjoy! You can always add toppings like plain Greek yogurt with some green onions, salt, and pepper, and hot sauce.
