πŸ”†Cauliflower CakesπŸ”†
❣️ 1 Cauliflower, cut up and roasted
❣️10 oz Potatoes, shredded
❣️1 Egg
❣️2 Tbsp Green Onions, chopped
❣️1/4 Red Onion, diced
❣️Salt, pinch
❣️Black pepper to taste
❣️1 Tbsp Olive Oil

πŸ”’Preheat oven to 400 degrees. Chop cauliflower, place on parchment paper. Sprinkle with salt and pepper. Add chopped onions. Roast for 20 min.
πŸ”’In a food processor, pulse cauliflower and onion mix until slightly chunky.
πŸ”’Let the mix cool. Add the egg and the rest of the ingredients (excluding oil).
πŸ”’Preheat skillet and add oil.
πŸ”’Use 2 spoons and plop 1/8c cauliflower mixture like pancakes onto skillet.
πŸ”’Cook until browned and temp inside reaches 160 degrees.

πŸ”†Enjoy! You can always add toppings like plain Greek yogurt with some green onions, salt, and pepper, and hot sauce.
