🔆Here is a fun way to get those veggies in! Being able to hide them is a plus. 😄 The kids loved these!
❣️ 1 Cauliflower, cut up and roasted
❣️10 oz Potatoes, shredded
❣️2 Tbsp Green Onions, chopped
❣️1/4 Red Onion, diced
❣️Black pepper to taste
❣️1 Tbsp Olive Oil
🔢Preheat oven to 400 degrees. Chop cauliflower, place on parchment paper. Sprinkle with salt and pepper. Add chopped onions. Roast for 20 min.
🔢In a food processor, pulse cauliflower and onion mix until slightly chunky.
🔢Let the mix cool. Add the egg and the rest of the ingredients (excluding oil).
🔢Preheat skillet and add oil.
🔢Use 2 spoons and plop 1/8c cauliflower mixture like pancakes onto skillet.
🔢Cook until browned and temp inside reaches 160 degrees.
🔆Enjoy! You can always add toppings like plain Greek yogurt with some green onions, salt, and pepper, and hot sauce.
