I love flavorful vegetarian side dishes! The kids and I are much more likely to gobble up our veggies when they have some kick to them. This could easily be made vegan, without the cheese.

1 head Cauliflower, chopped
1 Tbsp Extra Virgin Olive Oil
1 Tbsp Italian Seasoning (I used Spice Islands – Oregano, Marjoram, Savory, Thyme, Basil, Rosemary, Sage)
1 tsp Salt
1 dash Cayenne Pepper
1 Tbsp Parmesan Cheese
– Preheat oven to 400 degrees.
– Chop cauliflower into thick slices and lay floret side down on a baking sheet lined with parchment paper. This allows the flavors to soak in better and saves the florets from burning.
-In a small dish, combine olive oil and seasonings. Mix well.
-With a silicone brush, brush the tops of the cauliflower with olive oil mixture.
-Sprinkle salt evenly.
-Bake for 25 minutes until soft, with a bit of a crunch, and browned.
-Turn off oven and sprinkle cheese on the cauliflower. Let sit for 3 minutes until melted. Enjoy!
