Lighter Sloppy Joes

Sloppy Joes are normally made with TONS of sugar, fatty meats, and is plopped on a nutrient absent bun. This recipe bulks it up with ancient grains, fiber rich beans, and coconut palm sugar that is chock full of vitamins!

Ingredients:
1 Lb Ground Turkey (extra lean-96%)
1 TBSP Coconut Palm Sugar
1 TBSP Avocado Oil
1/2 C White Onion, chopped
1 TBSP Chili Powder
5 Tomatoes, chopped and deseeded Or 1 Cup No-Mato Sauce
1/2 C Carrots, Shredded
1/2 C Quinoa, cooked
2 TBSP Garlic, Chopped
15 oz Chickpeas (dried/soaked are best, but you can use canned)
Bunch of Dark Green Lettuce Leaves (I used Swiss Chard)
1/2 tsp Salt
1/2 tsp pepper

-Cook Quinoa per package directions.
-Add oil to a large skillet and heat to medium/high heat.
-Add onion and carrots. SautΓ© for 5 min.
-Add turkey, coconut sugar, salt and pepper, and chili powder.
-Brown meat and add tomatoes or no-mato sauce. Reduce to a simmer and add quinoa.
-In the meantime, mash chickpeas in a separate bowl.
-Combine all ingredients. Serve on the swiss chard.

Serve with green beans.  Enjoy!
